Delicious Tacos
Say hello to your new Taco Tuesday favorite! Mexican Shredded Beef in the crockpot is so easy and delicious. It is gluten-free, dairy-free, and all-around a healthy meal to make for your family. All you need to do is get up and add all your ingredients to the crockpot and simply put the lid on and forget it. It could not be any easier!
What I love about making Tuesdays our family taco night is that I always know what to make on Tuesdays. It makes meal planning a no-brainer. I make a different taco recipe each Tuesday of the month. Mexican shredded beef in the crockpot is one of my family’s favorites. Follow along to see how to make this fantastic meal.
This recipe takes only 9 simple ingredients. Each ingredient is real and wholesome, making this meal perfect for feeding your family.
- Grass-fed Beef Chuck Roast – Obviously this is the most important ingredient in this meal. Why do I suggest grass-fed? It is loaded with nutrients and has more health benefits than grain-fed meat. It also really does taste better.
- Beef Stock or Vegetable Stock– Adding this liquid will add flavor and put moisture into the shredded beef.
- Tomato Paste– This adds a delicious tomato flavor.
- Spices– Chili Powder, Cumin, Garlic Powder, and Cayenne all add a very delicious flavor to this dish.
- Jalapenos-This gives a wonderful spice to this dish. According to your heat preference, you can use more or less.
- Onions– These add flavor and texture. So so good!
How to make this recipe
This recipe starts off by adding a grass-fed beef chuck roast to your crockpot. Next, add the beef or vegetable stock along with the tomato paste. Add all the spices to a bowl to mix, and then spread onto the meat for a delicious flavored roast. Top it off with jalapeƱos and onions.
Shred the Beef Roast
Cooking this in the crockpot on low for a full 8 hours will help ensure that the meat is tender and easy to shred. Remove the roast from the crockpot and shred. You will then return it to the crockpot to mix with the liquid onions and jalapeƱos. This makes a simple and flavorful meal.

- Hard corn taco shells
- Rice
- Cauliflower rice
- Or create an amazing taco salad!

Mexican Shredded Beef in the Crockpot
Equipment
- Crockpot or slow cooker
Ingredients
- 2-3 pounds Beef Chuck Roast
- 1 cup Beef stock
- 3 tbsp Tomato Paste
- 1 tbsp Chili Powder
- 1 tsp Cumin
- 1/2 tsp Garlic Powder
- 1/4 tsp Cayenne
- 2 whole Jalapenos sliced
- 1 whole Onion Chopped
Instructions
- 1. Put beef chuck roast in the crockpot.2. Add beef stock.3. Add tomato paste and spices.4. Top it off with onions and jalapenos.5. Cover crockpot. Cook on low for 6-8 hours or high 4-5 hours. 6. Take the beef out of the crockpot and shred it on a cutting board or plate. Then return the beef to the crockpot and mix with remaining juices and onions and jalapenos.7. After mixing together and letting it warm back up. Serve and enjoy! Makes delicious tacos, burritos, taco salad or serve on rice or cauliflower rice. Don't forget to top with your favorite toppings!
This will add a new spin to taco night at our house. I normally use minced beef, but I like the idea of using a crockpot. In fact, I’ve had for crockpot for some time and have never used it. This will be a great opportunity.
