Easy Moroccan Lamb Stew is a 13-ingredient dish. First, you start with browning the lamb stew meat on the stove. Then you add all ingredients to the crockpot or a large pot on the stove except the dried apricots. My preferred way of making this dish is in the crockpot. Here is a list of all the ingredients that you will need.

  • Lamb – I buy the Lamb stew meat.
  • Chick peas – In the can work perfectly.
  • Vegetable broth- you can also use beef broth.
  • Onions- chopped in large pieces.
  • Carrots- sliced
  • Red potatoes- chopped in bite size pieces.
  • Diced tomatoes- I use canned or fresh.
  • Dried apricots- These are delicious in this recipe.
  • Ras El Hanout- I found this at Sprouts.
  • Cinnamon stick- One whole one works great.
  • Garlic cloves- I use a garlic press for this.
  • Allspice- one teaspoon is all you need.
  • Ginger- one teaspoon is all you need.

Ingredients

  • 2.5 lbs Lamb Stew Meat brown in pan first
  • 1 T olive oil
  • 1 onion chopped
  • 4 carrots cut into slices
  • 3 cups small red and yellow potatoes
  • 1 can diced tomatoes
  • 3 cups vegetable broth
  • 1 stick Cinnamon Stick
  • 3 large garlic cloves
  • 1 tsp allspice
  • 1 tsp ginger
  • 1 1/2 tsp ras el hanout Moroccan spice blend
  • 1 can chickpeas
  • 1/2 cup dried apricots cut into small pieces
  • 1/4 tsp cayenne pepper optional
  • salt and pepper to taste

Instructions

  • 1. Add Olive Oil to a pan on the stove and then add the lamb stew meat and lightly brown.
    2. Add the onion and sliced carrots to the lamb meat. Along with salt and pepper and other spices.
    3. Add small potatoes, tomatoes, and broth to the pan. Cover and simmer for 20 minutes.
    4. Add chickpeas and dried apricots and simmer for another 15 minutes.
    5. Serve and enjoy!
    To cook this in your crockpot-
    1. Brown lamb stew meat in a pan on the stove lightly in olive oil. Next, add this and all the other ingredients except chickpeas and dried apricots to the crockpot. Cook for 6 hours on low and then add chickpeas and dried apricots to the crockpot. Cook for another hour.
