Mexican Cheese Dip in the Crockpot

To my extended family, Mexican Cheese dip in the crockpot is known as Steve’s dip. It is my husband’s recipe that he got from his mother and then through the years he has changed it so it is officially his recipe. At every family gathering, Christmas, Thanksgiving, Easter, and Birthday parties this is what we are ALWAYS asked to bring. One year my sister-in-law told us not to bring it and everyone was upset. The convenient thing for me is that my husband always makes it, makes my life so easy!! I hope you and your family will enjoy this as much as ours does.

This recipe serves 16 – 20 people. Perfect for a large gathering.

Ingredients

The first step in making this dip is to brown the ground beef with chopped onion and chopped green bell pepper. Next, add salt and pepper and cover the meat with a generous amount of Chili Powder, see photo above. Cut the cheese into cubes. Put the meat mixture on the bottom of the crockpot and layer the cheese, soup and tomatoes, and green chilis on top. Cook on high for an hour and a half and then stir. Cook on high for another hour until the cheese is completely melted, stirring occasionally while cooking. Serve with tortilla chips. This would also be delicious on burritos or tacos.

Mexican Cheese Dip in the Crockpot

Equipment

  • 1 Crock Pot or Slow Cooker

Ingredients

  • 2 lbs Hamburger
  • 1 Onion chopped
  • 1 Green bell pepper chopped
  • 2 cans Cream of mushroom soup
  • 3 cans Rotel tomatoes
  • 1 1/2 lb Velveeta Cheese
  • 1 1/2 lb Colby Jack cheese
  • 1 can Diced green chilis
  • 3 Tbsp Chili powder
  • Salt and pepper to taste

Instructions

  • 1. Chop onion and green bell pepper.
    2. Cook ground beef with onion and bell pepper and add chili powder, salt, and pepper.
    3. While the ground beef is cooking cube the Velveeta cheese and the Colby jack cheese.
    4. Put the hamburger mixture on the bottom of the crockpot. Then top with cream of mushroom soup and Rotel tomatoes. Last top with all the cheese cubes and green chilis.
    5. Cook on high for 1 1/2 hours and then stir. Cook another hour stirring occasionally until all the cheese is melted and it is hot.
    6. Enjoy on tortilla chips. It also makes a delicious topping for any other Mexican dish.
