Instructions
Put chicken thighs in the bottom of the crockpot. Add coconut aminos, honey, ginger, garlic, and pineapple juice. Cover with the crockpot lid and cook on low for 6 hours or high for 4 hours. During the last 20 minutes add a can of pineapple chunks to the crockpot to warm. Serve on rice or cauliflower rice.
